#Back2Basics : Carrot Foxtail Millet IDLY


  • Urad Dal – 1 cup

  • Foxtail Millet – 2 cups

  • 2 Carrots (Grated)

Batter Preparation:

  1. Soak cleaned Dal and Millet for 4 to 6 hours.

  2. Make a batter of both in a wet grinder.

  3. Leave the batter for fermentation overnight.

Idly Preparation:

  • Add grated carrot mixture to the batter.

  • Now add the batter to idly tray and cook it for steam for about 15 mins.

  • Carrot Foxtail millet is ready to serve.

  • Serve Idlis with Peanut chutney and Sambar.

Health Benefits:

  1. High fibre: millets and carrot add fibre to the meal

  2. As the batter is fermented, good amounts of probiotics needed for the day.

  3. Complex carbohydrates present in millets helps to maintain insulin levels which in turn helps to lose weight and control blood sugar levels.

  4. Combination of millet and dal (sambar) improves the quality of protein in the meal, thus providing good amounts of proteins needed for the breakfast.

  5. Peanut chutney will provide essential fatty acids for the meal.
